Sautéed broccolini

This is a great and very versatile side dish that goes with any kind of meat or fish. It adds a nice touch of color and very healthy component to any meal

Ingredients

  • 2 bunches broccolini (they are related to broccoli – but have longer stems and smaller florets)
  • 2 cloves garlic, peeled and finely chopped
  • 3 tbs olive oil
  • 1/3 cup chicken stock, or vegetable stock or water, if you want to keep vegetarian or vegan.
  • [optional] 1/2 tbs chili flakes

 


Preparation

Wash the broccolini, and cut them into 3-4 segments.

Heat the olive oil in a fry pan. Add the broccolini, season with 1 tsp sea salt, add the chipped garlic, and stir fry for 2-3 min. Add the stock or water, and the chili flakes if you are using them, cover with a lid, and cook for 5 min. Test for doneness. I like my greens al dente. If you like yours softer, then add more liquid and continue cooking as needed.

Remove from the pan and serve immediately.
